Green Globe Artichoke (Cynara scolymus) is the classic heirloom prized for its generous, tightly layered buds with meaty hearts and rich, buttery flavor. Grown as a perennial in mild climates, Green Globe produces for several years, sending up stout flower stalks topped with harvestable buds. In cooler regions it can be grown as an annual with an early start; plants typically reach 3–5 feet tall and wide with excellent productivity.

Buds are best harvested when tight and about 3–5 inches across—snip with a few inches of stem before the scales begin to separate. Left to open, the purple thistle-like blooms are spectacular and attract pollinators, making the plant as ornamental as it is delicious.

Start seeds indoors 8–12 weeks before the last frost. For earlier bud set, provide a brief vernalization: grow seedlings cool (45–50°F) for 1–2 weeks after they reach 4–6 true leaves. Transplant to a sunny site with deeply loosened, fertile, well-draining soil.

Space plants 36–48 inches apart; mix in compost and mulch well to conserve moisture. Keep evenly moist during establishment and bud formation—drought stress can reduce bud size and tenderness. Side-dress with a balanced fertilizer midseason to support vigorous growth.

Harvest the central bud first, then the secondary side buds as they size up. In cold-winter regions, treat as an annual or lift and store crowns; in mild zones, cut stalks back after harvest and mulch crowns for reliable multi-year production.

I Wouldn’t Call Them Sour
Did I enjoy this candy? Absolutely. Did it meet my expectations? No. I have anxiety. I’ve heard about the technique of using a sour candy to distract from an anxiety attack. Well, I also have insulin resistance so I have been looking for a sugar-free sour candy which it turns out is a tall order. Unfortunately, I was disappointed when I tasted these because they really don’t taste sour. While I enjoy the flavors (especially grapefruit) they aren’t sour. A big bummer. I do think the nutrition for this candy is awesome, though. They have a good amount of fiber and are made with xylitol which is great for oral health. Overall, I think they are pricey and not necessarily worth the cost considering they are not anything special outside of the nutritional values. Bummer!
