• Dreadlocks (Amaranthus caudatus)
• Green Tails (Amaranthus caudatus)
• Hopi Red Dye (Amaranthus cruentus)
• Red Callaloo (Amaranthus tricolor)

Chinese Giant Orange produces large yields of edible, tan colored seeds. Hopi Red Dye flowers are used to add color to baked breads, and produces black seeds that are also edible. Red Callaloo is typically grown for its green and red leaves that are used young in salads and stir fries. Dreadlocks and Green Tails (Amaranthus caudatus) are primarily grown as cut flowers, but the foliage and tan seeds are also edible.

All species are easy to grow. If growing for grain, make sure you get to the seeds before the birds do!
